Easy! So, at this time of summer when you have more tomatoes than you can eat fresh in a day it's time to make fresh salsa! It is super easy and delicious! Here's my recipe!
Lots of tomatoes - 6? - 8? - 10? Depends on their size
One onion - medium (more or less depending on taste)
One lime
Garlic (I use three cloves)
Sea salt - a bit
Jalepenos 3
Obviously this is to your taste! I like sweet and medium heat for salsa so that's what my base is!
Use a food processor. Throw a fresh from the garden onion into the processor, I use one medium red. I put it in first since it's harder to chop. Then I throw in three jalepenos - I seed them before I throw them into the processor. Then I throw in a bunch of tomatoes - cored with smushy spots cut out. I use at least six maybe more depending on size. I usually overflow my food processor while blending! You may want to avoid that as it's pretty messy. I throw in three cloves of garlic and the juice of one lime.
Done, blend this until there are no ginormous chunks. Then, even though it tastes pretty good, DON'T eat it - refrigerate it for an evening or a day. All the flavors jell together and it's awesome!
Alternate endings! I don't like cilantro so I don't put any in - bleh! If you like it, go for it! Sometimes I add a red pepper or maybe a jalepeno both hand chopped just to add texture, taste and interest.
Apply to homemade tortilla chips for most awesomeness!
Homemade tortilla chips
4 Mama Lupe tortillas (if I make more I eat them all!)
Olive oil
Sea salt or Lawry's Season Salt
First heat up the oven to 400 degrees. Then, cut the tortillas with a pizza roller cutter - aim for at least 6 pieces per tortilla!! Put a few tablespoons of olive oil into a bowl with your salt of choice and toss your tortilla pies in the olive oil - don't use too much but don't use too little either. Moisten each slice with olive oil making sure that they each have a bit of oil and salt. Lay them out on a cookie sheet and bake them. They can be pretty close together. Bake about ten minutes, I sometimes flip them over. When they are done, you can grab an edge of the pizza pan and shake it and they all move. If they aren't freely moving cook them another few minutes. Once they cool a little bit they are ready to EAT!
