Sandwiches

Man, I should have taken a picture of this sandwich!

First, purchase some multi-grain flat bread rounds. (delish toasted with a bit of butter or peanut butter as well as this sandwich).

Add chevre' cheese

Half of a sweet red pepper - sliced so it lays flat

Tomato slices

Large lettuce hunk

Spicy mustard

Eat! Yes, I figure that was 2 servings of vegetables and 1 of whole grains! Yay! (this applies to my newest healthy eating challenge). It was GREAT! Added a Larabar - apple pie flavor (also a serving of fruit) as a sweet dessert. I topped this healthy dinner off with some of Marek's special road trip BBQ chips =]

Gotta love eating like a flexatarian! I have another sandwich for lunch tomorrow!
