Lentil soup

Yummy! Making lentil soup today in my crockpot. It will be a delish comfort food for Sunday afternoon! Here's my made up recipe... Whole foods are good.

1 bag of lentils, rinsed and picked through

Half of a large red onion chopped

2 handfuls baby carrots chopped

3-4 celery stalks sliced

64 ounces of veggie or chicken stock - I use Kitchen Basic brand cuz I can visualize all their ingredients


1 28 oz can diced tomatoes (that's the only size can I had I drained some of the juice out)

1 can spinach (again this is all I had but you could put in a big can if you like spinach- you could also use a bag of frozen or a few cups of fresh depending)

Garlic (I used 6 cloves but then I like garlic)

Some black pepper and some sea salt to taste

I threw in a quarter cup red wine since I had an open bottle!

Cook on low 8-10 hours serve topped with shredded cheese in a bowl or over brown rice!

Calories per cup sized serving about 350 carbs about 47 - wholesome goodness - priceless!
