Pineapple Side-dish

Holy smokes people, this stuff is AWESOME! now, true confession, haven't actually prepared this myself but I will be making it for Christmas dinner! My step mom, Mertie makes this each year for Thanksgiving. It is delicious! Also, I think, a unique side dish for festive occasions.

Pineapple Side-dish

2 - 15oz cans of pineapple chunks drained

3/4 cup sugar
6 Tbls. Flour
2 cups grated cheddar cheese
1 stick butter, melted
1 cup crushed HiHo crackers

Stir together the first three ingredients and put them in a greased two quart dish. Spread cheese over the top, pour melted butter over that and sprinkle crackers on top of he whole shebang. Bake in a 350* oven for 30 minutes. Yummy!

As I mentioned, I haven't made this yet. I might try substituting either Splenda or Truvia for the sugar but I might just leave it this way! Try it out! Great comfort food! Strangely yummy! Technically healthy? I say yes! Fruit and dairy! Yum, give it a whirl at your place and let me know how it goes!
