I found this recipe on http://www.sparkpeople.com/ and it sounded pretty easy, cheap and delicious. It also sounded pretty healthy, low calorie and filling. I made a couple of changes and changed the name to “Mexicali Soup”.
Ingredients
1 can corn undrained
1 can black beans – drained and rinsed
1 can fat free refried beans
1 can pinto beans
1 can diced tomatoes with chilies
shredded cheese
sour cream
jalapeños
salsa
Combine all the canned ingredients in a stock pot and heat thoroughly. Pour into bowls and top with shredded cheese, sour cream. Add jalepenos and or salsa for heat if desired. This would also be divine with shredded grilled chicken added to the mix! It is about 100 calories BEFORE you add the cheese and sour cream. 2 ounces of sour cream and cheese make it delicious and it is still pretty low cal!
