I have now made this recipe three times in a row to to rave reviews so I thought I would share it here. This is something my mom used to make and I always loved it. I made it for Marek, whose only complaint was that I didn't serve it with ice cream! I then taught my students to make it. (Plenty of apples from the neighbor!) They all liked it! Then, I made it again this evening in advance for breakfast tomorrow. Healthy, low calorie and delicious! The only surprise was the people who asked for the recipe! So, here it is!
First, preheat oven to 400*
Wash some fresh, preferably tart apples and core them. (This is the chore unless you are deft with a knife or have a handy corer!)
Place them in a baking dish that has been buttered or sprayed with non-stick spray.
Drop some butter or margarine or not into the hole. I use about a teaspoon of butter. Then sprinkle some cinnamon and maybe nutmeg in and on the apples. Lastly, add some brown sugar. When I am judicious I use about a tablespoon, sometimes I use two!
Cover the bottom of the baking dish with water or if you have some apple cider or juice use that.
Bake at 400* for 35 minutes or until they are easily pierced with a fork.
They aren't pretty but they are delicious! Use your juice to "baste" your apples before you serve. Also, consider Marek's suggestion and add ice cream!
