I just made this super yummy soup Saturday. I got the recipe from my Dad’s wife Mertie, she is a great cook. When we were there for Thanksgiving, she started this soup cooking for lunch the day we left. I didn’t get to taste it, but it smelled so delicious while cooking that I asked for the recipe. With the cold weather this weekend, I decided to test out the recipe and it was as great as the smell promised. Easy, yummy and healthy! Thought I would share it with you!
Herbed Tomato Soup
1/2 cup diced onion (could add celery if desired)
2 Tbsp. butter
1 – 14 oz can diced tomatoes with basil, garlic and oregano
Crushed garlic to taste (lots!)
3/4 cup chicken broth
3/4 cup half and half
1 8 oz can tomato sauce
1 tsp Italian seasoning
salt and pepper to taste
Cook in slow cooker 3 hours on high or longer on low. Blend all or some of the soup with a hand held submersion blender for creaminess. Top with Parmesan cheese!
I didn’t figure the calories completely but they are low. I added a grilled and then shredded chicken breast for protein.
It makes a few servings – maybe 4 or 6 – I am the only tomato soup eater in my family! I have had two servings and there is more for lunch next week! Hope you try it!
